It&#8217;s not that we haven&#8217;t bee cooking, it&#8217;s just that lately, it seems every time I try something new I&#8217;m just too tired to do pictures or take notes on the preparation. I&#8217;ll try to be more diligent (and stop cooking until 10 at night).</p>
<p>Got this from a banana bread recipe at allrecipes.com and modified it a bit. These are great because they are so moist and the nuts add great texture.</p>
<h3>Ingredients:</h3>
<ul>
<li>2 cups all-purpose flour</li>
<li>1 teaspoon baking soda</li>
<li>1/4 teaspoon salt</li>
<li>1/2 cup butter</li>
<li>3/4 cup brown sugar</li>
<li>2 eggs, beaten</li>
<li>1 1/3 cups mashed overripe bananas</li>
<li>1 cup crushed pineapple</li>
<li>1/4 cup chopped Macadamia nuts</li>
</ul>
<h3>Directions:</h3>
<ol>
<li>Preheat oven to 350 degrees F (175 degrees C). Lightly grease a standard muffin tin (I use Pam).</li>
<li>In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas/pineapple mixture until well blended. Stir banana mixture into flour mixture. Pour or spoon batter into each muffin slot, to just below the rim of the slot.</li>
<li>Bake in preheated oven for 25 minutes, until a toothpick inserted into center of a muffin comes out clean. Let bread cool for 10 minutes, then turn out onto a wire rack.</li>
